Any Sex and The City fan knows all about the magical little things that are; the cupcakes from Magnolia Bakery NYC! This started a trend in America that has now become the big thing over here!
Cupcakes are EVERYWHERE now, given as gifts, baked at home and they feature at almost any event you go to now.
If you’re anything like me, and like the idea of being a Gizzi Erskine in the kichen, but just aren’t quite there yet.. Cupcakes are a cute, girlie, yummy start!
Here’s a simple super delish recipe to give a go!~ Yum.
These lemon cutie cupcakes make an brill afternoon treat and they pack a zesty punch!
For the cakes:
-125g butter, softened
-125g caster sugar
-Finely grated zest of a large lemon
-2 eggs, beaten
-150g plain flour
-1tsp baking powder
For the yummlicious lemon butter icing:
-75g butter, softened
-125g icing sugar, sifted
-finely grated zest of a large lemon
-1 to 2tsp freshly squeezed lemon juice
1, Preheat the oven to 180. Set out 12 cupcake cases in a tray
2. Cream the butter in a large bowl or in an electric food mixer until soft. Add the sugar and grated lemon zest and beat until the mixture is light and fluffy. Gradually add the beaten eggs, then sift in the flour and baking powder then fold into the mixture. Divide the mixture between the paper cases and bake in the preheated oven for 7-10mins (or until risen and golden!) Leave to cool before icing obv!
4. To make the lemon butter icing, cream the butter in a bowl until v soft. Gradually add the icing sugar and beat, along with the lemon zest and enough lemon juice to soften the icing so it can be spread all over the little cakes!
Spread the cream over the little cakes and decorate to make them look extra cute!
Then TAAA DAAA. You’ve given Gizzi a run for her money!
